SCD Legal Breakfast Sandwich




Since starting the Specific Carbohydrate diet, I've had to be very creative with what I eat because I'm afraid of getting bored with what I'm eating. I've been on pinning so many recipes on Pinterest lately and it's making me more excited than bored. I found one recipe online for a flatbread grilled cheese in which I altered slightly to be used for a breakfast sandwich!

Ingredients:
1 Large Egg
1 Tbsp Coconut Flour or Almond Flour
A sprinkle of SCD legal cheese (I used parmesan but anything works)
1/4 Tsp Baking Soda
2 Tbsp Almond Milk

Stir ingredients together. Melt some butter in a pan. Pour in two pancakes of the batter. They will literally look like pancakes, so just flip it when each side turns brown.

These can be used for basically any kind of sandwich you want to make. I decided to put an egg and SCD legal cheese on it. You could make grilled cheese basically anything you want. I found it hard to pick up, so I just used a fork and knife to cut it up to eat.
